Recipe Testing Tuesdays: Sugar Cookies
Sugar cookies, or Sablé biscuits as in Carlos Lischetti's book Animation in Sugar Take 2, is the best blank canvas for decorating. Plus they taste fantastic too.
This recipe uses a few basic ingredients and just a few simple steps. The egg white left from this recipe can be used to make the royal icing for decoration.
I left my dough in the fridge overnight and it set really hard. It took my a good 10 minutes to knead it to an pliable consistency, so I'll probably try to leave it just a couple of hours next time.
A very important step is to chill the cutout cookies on the baking tray lined with baking parchment before baking. This way the cookies will hold their shapes better without melting too much.
