Recipe Testing Tuesdays: Banana Cupcakes with Peanut Butter Frosting

Hi again! This is my first proper blog post and I would like to introduce you all to this delicious cupcake - the Banana Cupcakes with Peanut Butter Frosting.

I got this recipe from Holly Wade at revamperate.com, in Southern California. I loved how simple her recipe is too follow & how well the end result was. Although following her quantity of ingredient I only managed to make 10 cupcakes and being a bit OCD I can't have that. So here I have adjusted the recipe to make 12 (in my cupcake tin anyway) and reduced the amount of frosting as I had a lot leftover, even though I filled the centre of my cupcakes too. Oh, I also converted all the measurements to metric to make it easier for those of you in the UK & Europe.

To make the cupcakes:

  1. Line a 12 hole cupcake tin with paper cups.

  2. Preheat the oven to 180ºC.

  3. In a bowl, combine the flour, baking soda, salt and cinnamon and set aside.

  4. In a separate bowl with your mixer, cream together the butter, sugar and sour cream until smooth.

  5. Beat in the egg, mashed bananas and vanilla extract.

  6. Slowly mix in the dry ingredients until well-combined.

  7. Evenly distribute the batter in to the paper cups (you can use a ice cream scoop to do that or the 2 spoons technique). Remember only fill in 3/4 full to avoid the batter to spill over the edges of the liners as it rises.

  8. Bake for 24-28 minutes until an inserted toothpick comes out clean.

  9. Let cool on a cooling rack while you whip up the frosting.

To make the frosting:

  1. Cream together the butter and powdered sugar until smooth.

  2. Beat in the vanilla and honey (optional).

  3. Then add the peanut butter and mix until creamy.

To assemble the cupcakes:

  1. Use an apple corer or a small knife to remove some of the sponge in the centre of the cupcakes (I like doing that to all my cupcakes so that you get a bit more icing or filling inside the cupcakes rather than only on the top. You can skip this step if you prefer not to).

  2. Choose a nozzle you like, using a piping bag, pipe the frosting onto cooled cupcakes and top with some sprinkles.

And there you have it! They're so tasty, everyone loved it.
